Ingredients

  • 2 Subtle Hint of Salt protein rice cakes

  • 1/3 cup cottage cheese (or Greek yogurt)

  • 2–3 oz smoked salmon (lox)

  • 2 tbsp cucumber, thinly sliced

  • 1 tbsp red onion, thinly sliced

  • 1 tsp capers

  • 1/2 tsp lemon juice

  • Pinch of black pepper

  • Optional: fresh dill

 

Instructions

  1. Spread cottage cheese evenly over each rice cake.

  2. Layer smoked salmon on top.

  3. Add cucumber and red onion slices.

  4. Sprinkle capers over the top.

  5. Finish with lemon juice, black pepper, and dill if using.
